Its striking red and white leaves blend together to make for a wonderful sight, and their bitter flavour contrasts well with milder leaves so they are perfect for salads.

Drizzle balsamic vinegar over any salad in which you use radicchio for a lovely contrast of flavours.

Best stored in a perforated bag in the fridge, much like a cabbage.
